Vanishing Oatmeal Chocolate Chip Cookies


Vanishing Oatmeal Chocolate Chip Cookies
(these will be chewy and flat)
2 sticks of butter
1 c brown sugar
1/2 c white sugar
2 eggs
1 T vanilla
1-1/2 c flour
1 t baking soda
3 c oats
1-1/2 c chocolate chips
Preheat oven to 350
Beat together butter and sugars
Beat in eggs and vanilla
Add baking soda and flour, beat again
Then the oats and chips get mixed in
big round tablespoon balls on cookie sheet
bake 11 (ish) minutes
remove when just barely golden brown on edges, they will seem undercooked on the inside, this will leave them chewy when they cool
Remove cookies onto the counter (a cooling rack will make them break)
These never last more than about a day and a half in my house.

I have determined that maple bacon is not as good as maple syrup ON bacon (or sausage). Bummer, I know. It would be much easier to buy the maple flavored bacon, but it just doesn't taste the same.

Healthy Banana Bread

1/2 cup butter
1/2 cup brown sugar
1 t. vanilla extract
3/4 t. baking soda
1 and 1/2 cups mashed bananas (about 3-4 medium bananas)
1/4 cup honey
2 large eggs
2 cups whole wheat flour

Preheat oven to 350

Beat together butter, sugar, vanilla, baking soda and salt.
Add bananas, eggs and honey. Beat until smooth
Add flour and stir until smooth (ish)
Spoon into lightly greased loaf pan.
Bake 50 min, then cover with aluminum foil to prevent overbrowning.
Bake additional 10 min or until toothpick comes out clean.

Allow to cool and enjoy
